My housemate is a little bit nuts for peanut butter so there is always a jar or two knocking about the kitchen. As I am invariably knocking about the kitchen as well the peanut butter and I come across each other fairly often! It is not only excellent with bananas in a sandwich but makes a fairly delicious baking ingredient too.
I love to combine it with jam to make pb & jam cup cakes, but my favourite recipe for it at the moment is one for cookies.
Peanut Butter Cookies
200g sugar (ideally light brown but a mix of caster and dark brown is just fine)
seeds of half a vanilla pod
200g plain flour
1/2 tsp baking powder
150g peanut butter
Cream the butter and the sugar together in mixing bowl until pale and fluffy. Add the egg and vanilla, mix well then stir in the flour and baking powder. Gently stir in the peanut butter, swirling it into the mix rather than blending well. Wrap the dough in clingfilm and pop it in the fridge, here is the website that tells you all about why you should refridgerate your dough. Once chilled, use a tablespoon to spoon the mixture onto a baking tray, pop in the oven and cook at 170 degrees C for 10-12 mins.
They will be soft when they come out the oven so leave them to cool slightly before scoffing. Though, try not to eat them all at once, your housemate might want some too…oops!
